How do I customise my post previews?

When I create a new post, I want it to display it in it’s entirety. But it only displays the post title, date and the heart ability. You have to click on read more to actually enter the post.

Also, how do I remove the Author details? I’ve ticked it off in post options but it still shows up. And next to the category name, it still says categorised, despite the fact that I’ve added it to a category.
