Change order of projects displayed

Hi there, at the moment I have the standard categories –

Art
Comics
Film & Video
Games
Music
Photography
Technology

these are currently listed in (and presumably they also display in) alphabetical order, if I wanted my front page only to display Technology for example, how can I define this, also how to I exclude projects which had finished, order by newest first and projects nearing their end date/time?

Also, I’d like to know how I can change the categories and add new ones.
