Menu bar and unviewable category

I experiencing two issues:

1. Is there a way to change the menu item color from white when selected? I changed the menu item titles to black font, but, when selected the title turns white which does not work with my white background.

2. Two of my categories are not showing up when selected via the menu bar. It appears like there is not enough space to show the category word.
