Portfolio Remove "Show All" Filter

I am looking to remove the First portfolio tab that “shows all” items, depending on the number you show. How can I remove this as the default when the page loads, and select the first category that loads? I do not want to limit the number shown, just remove showing all tabs and be able to select which is loaded with the page.
